Samuel and Benjamin Bruno, respectively, Hotel Director and Head Chef, have taken over management of this gourmet truffle-focussed institution, established by their father, Clément Bruno who in his role as owner is still a presence. His sons who now take up the reins of the business have not given into modernism, but have chosen to retain the traditions set down for them. Conviviality, sharing and top notch flavours are still the priority in this truly lovely address, which by the spring will be enlarged by the addition of terrace-veranda space. The mix of unfailing family dynamism and top quality cooking skills mean that this temple of the truffle is guaranteed a gourmet future.
