How to choose a pineapple

First, we should avoid pineapples with dark spots which may occur from shock or burn.
If the odor is too strong, it means that there is fermentation.
To determine if it is mature, pull the leaf from the middle at the top and if it comes off, the pineapple is ripe. If it comes by itself, it is too ripe.
Then you hit the fruit lightly with the palm of your hand : if the noise is muffled, it is juicy, and if the sound is hollow, there is not enough pineapple juice.
Once purchased, the pineapple should be eaten within 2 or 3 days. It is a fruit that is small guard : at room temperature, it ferments and it can not stand the cold too long.
