Prepare mussels

Start by removing the byssus (filament produced by the animal to cling) with a snap. Then scratch the mussels along the shell.
You should also remove limestone parasites that could make the cooking water undrinkable.
Then wash mussels in several waters until you obtain clear water. You should not let the mussels soak.
While washing them, remove dead mussels (floating on the surface), broken shells and open animals. When changing water, remove the mussels before emptying out water to prevent the redeposition of dirt on the shells.
The mussels are ready. At last, you can cook the poor little animals.
