4 People

For the dough:
- 250 g flour
- 10 ounces of water
- 1 tablespoon olive oil
- 1 pinch of salt

For the stuffing:
- A bunch of green chard
- 2 eggs
- 50 g of cooked rice
- 1/2 white onion
- Parsley
- Grated parmesan
- Salt and pepper

To prepare the dough:
Mix flour, water, salt and oil.

To prepare the filling:
Blanch the green chard, drain and chop finely.
Mince the onion and fry in a olive oil.
Mix all ingredients in a bowl, adding the cooked rice, eggs, parmesan, parsley and oil. Salt and pepper to taste.

To preparing the barbajuans (chard fritters):
Roll out the dough thinly on a 15 cm wide. Deposit the equivalent of 2 tablespoons of filling on each strip.
Fold the strips and cut into half moons using a roller.

Dip them in hot oil until the dough is golden.
