Bean Soup from Nice (Entrée)

- 175 g of fresh green beans
- 125 g of fresh white beans
- 2 tablespoons of vermicelli
- 3 potatoes
- 3 tomatoes
- 2 garlic cloves
- 2 teaspoons of chopped fresh basil
- 1 tablespoon olive oil
- 200 g grated parmesan
- salt
- ground black pepper

- Wash the green beans and remove the strings before cutting them into small pieces.

- Boil up a pot of water and then dip the tomatoes into it for 20 seconds. Pass the tomatoes in cold water before peeling and cutting them into cubes.

- Wash and peel the potatoes before dicing.

- Place 1 liter of lightly salted water in a large saucepan and bring to boil.

- Put the green beans, tomatoes, potatoes and white beans into it.

- Add salt and pepper and mix well.

- Cook over simmering water for 45 minutes.

- Peel the garlic cloves.

- Crush garlic and basil, gradually adding olive oil.

- Take a ladle of soup from the casserole and mix it with the crushed garlic and basil. Then add this mixture to the soup, stirring gently.

- When 45 minutes have passed, add the vermicelli and simmer the soup 15 minutes more

- Serve in a bowl and place the grated Parmesan in a small dish.
You can also mix the soup before serving.
