- 300 g fresh cheese goat
- 200 g pitted olives (half green and half black)
- 6 slices of bread with sesame
- a few sprigs of chives
- rocket salad
- olive oil
- salt
- pepper

Goat cheese quenelles with olives

Mix the olives by adding 2 tablespoons of olive oil.
Season with salt and pepper and add the chopped chives.
Take a fork and mash the cheese goat.
Make 6 quenelles and dip into the mixture with olives.
Toast the bread.
Place a few rocket leaves on the edges.
Add the quenelles.
Garnish with a few chives and add a drizzle of olive oil.
It's ready. Serve hot.
