Ingredients
- 1 egg yolk
- 80g sugar
- 10 g butter
- 75g fine semolina
- 500g marrow
- 50cl milk

Marrow gratin

Peel the squash before cutting into pieces.
Cook at least 30 minutes in water, drain and mash lightly.
Melt butter, add milk, semolina, sugar and stir well until the mixture becomes thick.
Place the marrow puree in a dish, add the mixture and stir.
Bake a few minutes until a crust appears on the surface.
