Ingredients
- 800g strawberries gariguettes
- 200g cream liquid
- 1 vanilla bean
- icing sugar for decoration
- crystallized violets
- puff pastry

Cut 4 rounds of puff pastry about 10 cm large and bake them 15 minutes. Remove from the oven, add icing sugar and put them back for 5 minutes, until the sugar is caramelized.

Whip the cream fraiche (200g) by adding 2cl icing sugar, the inside of the vanilla bean and some crystallized violets cut into small pieces.

With 200g of ripe strawberries, prepare a coulis in a blender.

Tips :
For assembly:

Cut the pastry in half and slice them open.

Place the whipped cream and diced strawberries on the center.

Slice strawberries in the lengthwise and place them like a star around the pastry.

Add whipped cream peaks and strawberry coulis on the plate.
