• 12 ripe purple figs
• 4 egg yolks
• 25 g butter
• 50 g sugar
• 20 cl Muscat

Tian figs

- Wash and pat figs. Split into four without separating sections. Butter a dish and place them on it.
- In a bowl, whisk the egg yolks and sugar with electric mixer until they become light and pale.
- Place the bowl in a bain-marie. Gradually add the muscat, without stopping to whisk, until mixture thickens and triples in volume (approximately 10 minutes).
- Heat the broiler. Cover the figs with sabayon. Let brown 5 minutes under the broiler. Serve directly from baking dish.
