Bigarade

The bitter orange tree (in French, bigaradier), originally from South Asia, has been growing in Provence since many centuries, mainly on the Riviera. Its blossoms and fruit are used to make perfumes, jams and liqueurs. This liqueur uses citrus, a vanilla infusion, a fresh mint spirit, syrup, cane sugar and alcohol. Bigarade is enjoyed as a digestive, well chilled and can be used to deglaze duck breasts. It is also a great accompaniment to frozen mousses, any dessert with a chocolate base, and fruit salads.
