6 People

- A bean
- 5 eggs yolk
- 20 g of fresh baker's yeast
- 3 teaspoons coarse sugar
- 60 g caster sugar
- 2 packets of vanilla sugar
- 130 g butter
- 500 g of wheat flour
- 200 g candied fruit
- 1 teaspoon orange blossom
- An untreated orange

Twelfth night cake

In a half glass of warm water, dissolve the yeast and leave aside.
Wash and grate the orange zest.

In a bowl, add the flour. Make a hole and add the 4 eggs yolk. Add the sugars.
Cut the softened butter into small pieces (Exit it from the fridge just before starting the recipe), wet with the yeast and mix manually. Knead until a stiff dough.

Add the orange blossom and the orange zest. Lay down the bean and form a ball. Let rise about 6 hours in a cool place.

Preheat your oven to 200°C (410°F - thermostat 6/7).

Flatten the dough by hand lightly. In the middle, make a hole to form the crown and place it on a pie plate. With the remaining egg yolk brush the crown. And the final touch of decoration, place the candied fruit pressing them lightly into the dough.

Bake at 200°C (410°F) 30 min while watching.

Once out of the oven, you can sprinkle with coarse sugar or powdered.

Tout les ingrédients et le temps de levée ont été bien respectés mais ça n'avait pas du tout la consistance d'une brioche mais d'un gâteau étouffant ! Je ne recommencerai pas !
