Mediterranean Pancakes (Plat)

- 35 cl of milk
- 125 g flour
- 3 eggs
- 1 tablespoon of oil
- 1 pinch of salt
- 50 g pitted black olives
- 1 kg of tomatoes
- Chopped parsley
- Tarragon
- Salt and pepper

Mediterranean pancakes

Make a pancake batter.
Then peel the tomatoes (to make it easier dip them in boiling water a few seconds, the skin will peel more easily).
Cut the tomatoes into pieces and fry in a little bit of olive oil.
Cut the black olives into small pieces and fry with the tomatoes.
Then add the tarragon and parsley, salt and pepper.
Once the mixture is done, fill the pancakes and serve hot with a salad.
