Tomato mozzarella fritters (Entrée)

- 16 cherry tomatoes
- 125g mozzarella
- Fresh basil leaves
- 2 egg yolks
- 225g flour
- 25cl of very cool water
- Oil for frying
- Salt, pepper

Tomato mozzarella fritters

- Wash and dry tomatoes
- Turn off the hat of tomatoes, scoop out, salt inside and drain
- Mix the mozzarella, chop the basil and mix the two ingredients. Add pepper.
- Fill the tomatoes with the mixture and replace the cap.
(Use a toothpick to keep the hat on the tomato.)
- In a bowl, beat egg yolks into the water. Add flour all at once and mix.
- Put the oil in the fryer.
- When the oil is hot, soak the tomatoes in the batter then into the fryer. When the fritter begin to brown, remove and place on paper towels.
- It's ready.
